i have taught here since 92,harry wright international is the best club to go to for western parents.hoi tin or hilltop swimming club are great for chinese speakers.hoi tin if you want aggressive coaching,hilltop if you are happy if your child learns with friendlier coaches.some places with pools already have a sports program and they dont encourage outside coaches,generally because inhouse coaching of swimming is poor and they dont want to lose business.all the major clubs have coaches,the country club in shouson hill has michael who was hk coach of the year,no mean feat for a ..gweilo.. but back to your point.just turn up at any major pool in hk island..victoria park.. kowloon..hong kong park..watch the coaches with the kids,see which style.suits you,then approach them.go mid week,4 till 5 or 6 till 7.dont go 5 till 6 as this is when govt pools close for cleaning but are busy with club students and you dont get a decent choice of quality coaches who enjoy small classes.hope this helps you.
