Baking a cake without an oven
Posted by lililili (766 days ago)
Hi everyone,
Ive been really wanting to make a cake lately but I dont have an oven. I did hear from someone that you can make them in a rice cooker. Has anyone tried this before? Or even heard of it? Do you have any recipes? Or even great and easy dessert recipes not requiring an oven.
Ps: Yeah I know I can just go out an buy one but I would like to have that sweet smell swirling out of my kitchen.
Cheers

Do you have a crockpot?
Crockpot Bread Pudding - this is cooked directly in the crockpot.
4 egg yolks
2 cups of light cream or milk
1/4 cup sugar
1/2 teasp vanilla essense
pinch of salt
5 cups cubed stale french bread
1/4 cup sherry (optional)
4 egg whites beaten stiff
1 jar raspberry jam
Beat the yolks with the sugar until frothy. Mix in all remaining ingredients except the jam and the egg whites. Mix until the bread is soft and has absorbed a lot of liquid. Fold in the egg whites. Spoon in layers into buttered crockpot, dribble raspberry jam between layers. Cook for 6 hours. Variations of this theme can be done with fresh overripe peaches, plums, etc.

Crockpot CHOCOLATE BREAD PUDDING.
2 cans evaporated milk
1 cup chocolate chips
4 large eggs
1/4 cup sugar
1 tsp vanilla extract
500g white bread (cubed, crusts removed)
Combine the milk and chocolate chips, heat for 2-3 minutes. Stir, then whisk in the eggs, vanilla and sugar. Lightly butter the crockpot liner and place the bread cubes evenly over the bottom. Pour in the chocolate mixture pressing it into the bread so it absorbs. Let sit for 15 minutes, then cook on high for 2 & 1/2 hours. Serve warm with whipped cream.

Haven't tried any of the above recipes. If you do try them, tell us how they work out.
I would post one for crockpot apple crumble, but unfortunately, cooking apples are not readily available in Hong Kong.

Quite right Carmen K, and I suppose that you could substitute other fruit.
Crockpot Apple Crumble
6 medium cooking apples, peeled, cored and sliced
1 1/2 cups flour
1 cup packed brown sugar
1 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
3/4 cup butter or margarine, softened
Whipped cream
Grease crockpot, arrange apple slices in the bottom. In a mixing bowl combine flour, sugar, spices and butter. Cover the apples with this mixture. Tamp down lightly. Cook on HIGH for 3 to 4 hours, until apples are tender. Serve in dessert dishes with whipped cream.
