Open and clean them. Remove the orange part and rinse with water.
Slide a knife under the scallop to separate it from its shell.
Put some cooked mung bean noodles in each shell-half, follow with the scallop and then top with lots of garlic. Season with pinch of salt and pepper. Steam for a few minutes!
Note: The mung bean noodles must be soaked in lukewarm water and then cooked in boiling water. Don't just soak the noodles (i.e., without the boiling part) because you'll end up with dry and hard noodles after you steam the scallops (with the noodles)!
