My souffles came out from the oven risen beautifully, but alas, while I was still removing the individual ramekins from the bain-marie, the souffles started to fall. How do I keep souffles from falling before they reach the dinner table?
put some hard paper above and all round the edge of the bowl. anyway, must eat as soon as it comes out from the oven, cannot stand up that long, it has to fall at one point.
