I made this cake yesterday.. very light and delicious, no butter/margarine and no cake flour just use corn flour... less sugar too. Give it a try :) My hubby thought this cake from instant mix cake which i always do.. but i made it from scratch..
Ingredients :
9 egg yolks
50 gr sugar
9 egg whites
1 tsp cream of tar tar
125 gr granulated sugar
1/4 tsp salt
50 gr cocoa powder
15 gr corn /maizena flour
1.Preheat the oven to 350'F (180'C). Grease 9 inch round cake pans or use baking paper.
2. In a large glass or metal bowlwhip egg yolks with 50 gr sugar until thick and pale, about 5 minutes. set aside.
3. In a separate bowl, , whip egg whites and cream of tartar to soft peaks. Gradually sprinkle in 125 gr sugar while continuing to whip until stiff, but not dry.
4. Sift in the cocoa powder,flour and salt to the egg yolk. Gently stir until incorporated.
5. Fold 1/3 of the egg whites into the batter until very well mixed, then gently fold in the remaining egg whites. A few streaks are okay.
6.Bake for 25 to 30 minutes in the preheated oven, until the top of the cake springs back when lightly pressed.
Notes :
Flour : 1 cup = 140gr
Sugar : 1 cup = 200gr
uh.. i think the texture will be different if you use cake flour or wheat flour... i'm not an expert..so i cannot give you best advice :) but corn flour are easy to get ... hypermarket and small shops will have it... if you're in china they called it.. yu mi fen 玉米粉. some sell it in yellow box.
more chocs powder taste better... if you like sweet cake then u have to add bit sugar cause this one not too sweet which i like it. you can add chocolate chips if you want.
Oh i had same doubt as you when i read the recipe.only 15g flour?? will that be enough?? .but yes, it only requires 15g corn flour.extra flour will cause the texture hard.this cake will be moisty with less flour.
