potato salad recipe

what are the best ingredients for potato salad - want one of them to be mint !

Purists will probably wince, but I like diced crisp apple with spring onions and/or chives and walnut pieces in a potato salad. A would say a good, creamy mayonnaise is essential, but really I guess you just put in whatever you like if you think it'll go. Mint, chopped peppers, throw in toasted sesame seeds - whatever you fancy.

I think you should keep it simple. A good potato salad is just potato, spring onions, parsley, chives, s&p and a good mayo...maybe add a quartered egg to the top but do not mix coz some people don't like it. Tastes better when sits in the fridge overnight. But if you want to use mint, I would make it more of a persian or moroccan style and base it on sour cream (light), cumin, S&P, onion, mint and coriander.

Ohh a good potato salad has to have eggs! And a hint of mustard. Mayo has to be Kraft Real Mayonnaise. Otherwise a home made mayonnaise.
Actually a good potato salad depends on the country you are from and the people who will be eating it. German potato salad is different from American. Depending on the cultural background, what one finds appealing, others might find lacking in taste.

I am American but use my grandma's receipe (she is German) and always puts in diced pickles and some cubed danish gouda... delicious. I think high quality mayo is the key ingredient and I prefer Best Foods which is a bit tricky to come by but well worth the effort

I do think that eggs are a necessity in a good potato salad. Onions as well. BUT what really gives potato salad a special kick is dressing the potatoes while they are HOT, (after being cut up) with olive oil and red wine vinegar. Totally changes the flavor and makes it yum.

Potato Sala (Mediterrean Style)
Any recipe is good, just a matter of taste. This is the way we do it in the South of France:
Cook some new potatoes (thin skin).
Dice: onions, green peppers, celery sticks, boiled eggs, (about one cup of each), shallots, parsley, anchovies (remove the oil).
For the dressing: Mustard Sauce. Same as mayo but no egg yolks. It's just Dijon mustard, add oil little at a time, pepper, salt (not too much as the mustard and anchovies are already salty) and a hint of wine vinegar.
Mix all the ingredients while potatoes are still warm (it absorbs better). A few hours in the fridge and re-adjust the dressing before serving.
Optional ingredients: cumin seeds (not too much or it gets bitter), black olives (the small ones).
