they are usually stir fried on their own and served with oyster sauce, or they can be used in a stir fry like any other veg would be used. I really like them, but some people don't like the flavour - apparently, they are a bit spring oniony/chivey tasting..
which ones are they? are they "chive stems"? long green sticks with a little bud/flower at the top? if so, i stirfry them with prawns. if you don't cook them enough they will be to oniony. but at the same time, they cook really quickly so you gotta take them off the heat fast.
