How do you cook artichokes? Nothing in my limited number of cook books. Thanks

I am very boring, but my favourite way to eat an artichoke is simple...
(I also prefer plain boiled sweet corn on the cob, boiled boston lobster, etc... some food is just good plain and simple!)
steam the artichokes
buy a fresh artichoke - ones where the leaves/petals are tight and not opening yet
Cut off the end of the step, pick off any dodgy looking leaves, trim off any sharp edges.
Squeeze on some lemon (not much)
Steam for about 40 minutes - they are done when the outer leaves are easily removed.
when done, serve with a small dish of melted butter or olive oil with garlic (or pepper, or fresh herbs).
peel each leaf, dip into butter, eat away....
also good without butter and just plain!
then when you get to the heart, use a fork and knife to dip and eat.

ARTICHOKES STEAMED IN OLIVE OIL AND GARLIC
SERVES 4
If you have never cooked whole artichokes, you are in for a treat. They are easy to prepare once you know how. And eating them is so much fun.
INGREDIENTS
4 fresh, firm artichokes
1 lemon, cut in half
2 tablespoons olive oil
2 tablespoons minced garlic
Salt and pepper to taste
Lemon juice or balsamic vinegar (optional)
To prepare the artichokes, first remove the stem. Pull off any small loose leaves at the bottom. Cut about 1 inch off the top and rub with the lemon. This prevents browning. With a kitchen shears, cut the points off all the leaves. Rub additional lemon over the entire artichoke. If desired, you can stuff some sliced garlic into some off the leaves.
Heat the olive oil over medium-high heat in a pot large enough to hold the artichokes in one layer and cover them. Add the minced garlic and sauté about 1 minute. Place the artichokes, stem-side down, in the pot. Baste with the garlic and oil. Add enough water to come up about 1 inch. (The less water you use, the tastier it will be. However, it will also take longer to cook.) Cover; reduce heat to medium-low and simmer until the leaves pull off easily, about 1 hour depending on size and freshness of the artichokes. Baste occasionally with the liquid. Sprinkle with salt and pepper to taste.
To serve, place each artichoke on a serving plate. If desired, sprinkle with lemon juice or balsamic vinegar.
Note: For those of you who have never eaten a whole artichoke, it is simple and lots of fun. Just remove the leaves, one at a time. Place the meaty part of the leaf against your bottom teeth and then scrape to remove the flesh. If the flesh on the outer leaves seem dry, just discard them and continue. After all the leaves have been removed, use a spoon to scoop out and discard the fibers from the bottom, which is all flesh, and eat that as well.

You can just steam them (pressure cooker is the quickest way) and eat the leaves with a "vinaigrette" dressing.
With the bottom you can make a nice stew (remove the fibers of course) with potatoes. It sounds weird but it goes well together. Just dice and fry onions, garlic. Add the diced and cooked (but not overcooked) potatoes and artichokes bottoms, seasonings (some cumin powder since it's a North African recipe). Wet with some chicken broth and simmer for 10/15 minutes.

If you are looking for fresh artichokes in HK I would try 'Gret' in Pacific Place or perhaps 'Citysuper'. Have no idea about GZ but if you have any friends in the hotel or catering industry they might be able to help.
