need advice on how to keep cheese from being mouldy

as i'm fond of buying cheese then stack them in the fridge..are there any other ways to keep them, after they've been opened, to prevent moulds and prolong their freshness..thanks

If you're in Hong Kong (or anywhere else in Asia for that matter) I'd keep all cheese in the fridge, or it will be green and fluffy before you can say mozarella - especially in this weather! The best thing to do is to wrap cheese in cling film, then in grase proof paper (individually for each block of cheese).
Actually, the best thing to do, if practical, is to buy the cheese in quantities you can eat in 1 or 2 goes, and on or near the day of eating.

How to store cheese :
Once open and cut, wrap the leftover cheese with aluminium foil, then put it inside small clear plastic bag, don't let air go inside,then keep it in the fridge.. If still have moulds, you can slice the mould and the rest of cheese are still fresh.

listen folks....dont kill cheese by suffocating it! cheese needs to breathe, from what i see here you'll all suffocate it. whole cheeses, kep em lightly wrapped in the fridge, (opened) or cut cheese, if in large chunks then again wrap only lightly , let it breathe.
if its sliced/thinly cut etc, then yes wrap but use it quickly.
if large chuinks and they get mouldy just slice the mould off and enjoy the cheese, after all many cheeses are all about mould!

thanks for all the input..i just bought mozzarella the other week,i only used half of it, as i was planning to use the other half for my pizza, when i checked it was full of molds...

I freeze already shredded cheese with no ill effects - only if you use in cooking. Otherwise, I use one of those snap lock plastic containers in the fridge, no extra wrapping. As Mac says, cheese needs to breathe or else sweats. Lasts a while, though best if used quickly. I haven't tried freezing blocks of cheese. I wonder if that would work if you want it for cooking, rather than on a platter.

hosanna, if it was good mozzarella, rthen it came in liquid or at least packed "wet" reserve the liquid and pack it in it again after use.
