asparagus menu starting today.....mmmm yumms yumms......how do ya all prepare those white godesses?

Cream of Fresh Asparagus Soup
INGREDIENTS:
1 pound fresh asparagus, trimmed and cut into 1 inch pieces
1/2 cup chopped onion
1 (14.5 ounce) can chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1 pinch ground black pepper
1 cup milk
1/2 cup sour cream
1 teaspoon fresh lemon juice

DIRECTIONS:
1. In a large saucepan, combine asparagus, chopped onion, and 1/2 cup chicken broth. Cover, and bring to a boil over high heat. Reduce heat, and simmer uncovered until asparagus is tender, about 12 minutes. Process the mixture in a blender to puree the vegetables. Set aside.
2. In the same saucepan, melt the butter over medium-low heat. Stir in the flour, salt, and pepper. Cook, stirring constantly for 2 minutes. Whisk in the remaining chicken broth, and increase the heat to medium. Cook, stirring constantly until the mixture boils. Stir in the asparagus puree and the milk.
3. Put the sour cream in a small bowl, and stir in a ladleful of the hot soup. Add the sour cream mixture and the lemon juice to the soup. Stir while heating the soup to serving temperature, but don't allow it to boil. Serve immediately.

huh no is niet my soup recipe.....lianz posted that.....i dont give soup and sauce recipes........thats too much to ask....of a chef

Spikka da inglisher boys. I used to eat them raw when I grew them myself. I hope my little plot is being well looked after at home, but I doubt it. Otherwise I just blanch if they are fresh enough and serve with butter. Boring and it relies totally on the freshness.

Butter yes! Cleared butter, blanch them for 3 minutes. Raw a bit too bitter for me. Tried it.

yikes who the heck wants to torture himself with raw white asparagus? well....and BTW asparagus are not boring at all! its only your imagination that is.....sorry dont wanna be rude, but asparagus are very versatile. its the people who make em boring by always asking for the same, like with nutty butter......nice but boring.

Mine were green. Picked young they are slightly crunchy, sweet and asparagus-y. Old mac - I meant MY RECIPE was boring, not asparagus. Seems like you agree. Btw did you know a certain percentage of the population have very weird smelling urine after eating asparagus and the other part don't?
You could try Deutsch, Latin or Espanol if you like, but Ed won't.

Uhm....why one smells his urine after eating asparagus....lol....yes happens to me to.....and also painfull feet afterwards.....but who cares....season is only once a year......and i absolutely love the taste!!!

from supermarkets usually with woode3n butt,,,,cause they are too old.....if you need 5 kilo and cvan pick up, deposit 5* HK$ 175 in my acoc*nt, and next week you can pick up!

Five kilo is a bit much but I still can handle it.
Will make some soup without the roux and use the other 3 kilo for different recipes. How much you said again per kilo?
