How do I make jello that stays firm in squares like in the restaurants? What brand of jelly powder do I use?
(I am based in Hong Kong)

you can use any brand, pay attention on composition between water and powder. if too many water then it wont stay firm.

Mac - why you using these toys, eh? Itsme - yes lianz is right. If you want the firmer squares then you use slightly less water (you may have to experiment a bit) and square molds or a sharp knife coated with icing sugar for sweet or cornflour for savoury, to cut them up.

I tried this once and it turned out as per what you are requesting (no refridgeration needed). One box your choice of any flavoured jelly One box - unflavoured gelatine 5 Tbsp. sugar Dissolve all of the above in 3 bowls of boiling water. Add a bowl of cold water and leave to set.

the boxes of jello usually have the recipe... they call them "jello jigglers"...and no, i'm not talking about sex toys...
