I have had so many different pad thai dishes.
Try a google search. Then synthesize the recipes you find to make one you like best.

there are shops in the wanchai market selling authnetic thai ingredients--- from coconut cream, lemongrass, kaffir lime leaves, thai fish sauce, and yes, flat noodles too

The flat rice noodles in any Chinese supermarket work just fine. Just don't overcook them!
