A few tips to keep the rolls crispy.
- buy the thin wraps. For the same weight, the more wraps stated on the package is an indication that the wraps will be thinner.
- filling must be dry. Avoid using cabbages as it releases more water.
- use clean oil(fresh) for deep frying; oil to be hot enough , fry a few at a time to keep the temperature even
- stand the spring rolls vertical on a wire rack
Note:
1. Reheat in oven before serving which will also warm and crisp spring rolls. Taste better when eaten warm.
2. Or, after frying, drain the oil from spring roll, stand the rolls vertical & keep warm under very low temp in electric oven until serving time.
