I'd love to learn some recipes that are quick and easy to make.
Though not a great cook I like trying out stuff that doesnt involve too much time in the kitchen.

2 salmon fillet, sliced
2 packs NZ mussels, removed from shell
1 carrot, julienned
1 zucchini, cubed
1 green bell pepper, sliced
On a non-stick pan, stir fry vegetables in butter for 3 minutes.
Add salmon and mussels, 1/2c water and 1/2c cream. Simmer only until salmon turns opaque. Season with salt, pepper and red chili flakes. Top with grated mozzarella/cheddar
This quick pasta dish takes about 10 minutes from putting the water on to boil to putting it on the table.
Fettuccine al fungi
Serves 2
Ingredients
170g fettuccine (we often use pappardelle)
200g mushrooms, sliced
2 tbsp butter
150ml crème fraîche
Freshly grated parmesan
Method
1. While the pasta is boiling, fry the mushrooms in butter until lightly browned.
2. Drain the pasta and tip into the mushroom pan. If the frying pan isn’t big enough, tip the mushrooms into the pan with the pasta.
3. Stir in the crème fraîche, salt and plenty of black pepper. Serve with grated parmesan.
You can change it around by using a mixture of mushrooms. Or add garlic or herbs such as tarragon or lemon thyme. You can also add cubes of pancetta to the mushrooms.
You can get low-fat crème fraîche, if watching waistlines. One good thing about crème fraîche is that it doesn’t curd so you won’t end up with a nasty mess. The other good thing about crème fraîche is that it keeps in the fridge for a couple of weeks after opening.
