does anybody knows how to make kare kare
a filipino dish.tried in cebu when we
go for vacation.

You can go online and check it out. Dont buy the powder mix (like the kind you can buy in Filipino stores) They taste powdery and not the same. The key ingredient is the shrimp paste. Good luck...

KARE-KARE
3-4 kgs Ox tail, rinsed
1/2 cup raw rice, ground to a powder in a food processor and dry-fried in a pan
1 med banana heart blossom, sliced
2 eggplants, sliced diagonally
1 cup chopped onions
1 head garlic, crushed
1/2 kg string beans, stringed and cut into 4"
1/4 c annatto seeds
1 cup creamy peanut butter
5 cups oxtail stock
1/2 cup bottled shrimp paste or bagoong(Barrio Fiesta is good)
- In a large stockpot, cover oxtail with about 10cups water, boil and simmer until tender (check at 2.5 hours). Set aside
- Soak banana heart and sliced eggplants in a bowl of water. Set aside
- Soak annatto seeds in 1 cup hot oxtail broth for 5 minutes and mix with a spoon until color develops. Strain liquid and discard seeds
- Disperse peanut butter in annatto broth. Set aside.
- In a large heavy-bottom pot, saute onions until soft, add garlic and saute until onions caramelize.
- Add oxtail and saute lightly. Add remaining 4 cups of the broth and allow to simmer.
-Add roasted ground rice, annatto-peanut butter mixture and shrimp paste. Simmer 20 minutes
- Add the vegetables and turn off heat after 5 minutes or until vegetables are just cooked.
- Season to taste and serve with more bagoong. Best with sliced green mangoes on the side and more bagoong
** Nothing wrong with the powder mix in my experience when I do a shortcut version. I add peanut butter and shrimp paste though, both of which are not indicated in the cooking instructions. If tripe is available, you can also cook this together with the oxtail.

kare - kare one of my favorite filipino dish! [for i am filipino :D ] ... traditionaly they use real peanuts and pound it.. instead of the regular peanut butter spread.. they say it gives the real authentic taste.. . but heck kare kare is kare kare for me!. and oh! try Mang Ambo's Kare-Kare in wanchai its a filipino mini resto where they sell cooked filipino dishes.. hehehe

Oh god! Such great comfort to hear that they serve Kare Kare in Guangzhou. I thought I'd be missing my Filipino food while I'm in Guangzhou.

If you take the MTR to wanchai, take the exit to Johnston Road( can't remember the number sorry) and you will be facing the tram line. Cross the road and on the corner street to your left is a garment export/import shop with alot of clothes hanging outside. Take that street and there are about 3-4 Thai provisions shop at that one street alone. As you go along the intersection, on the left, there are about 2 more shops. Any of these shops will sell anything you need for your Thai cooking and some for your Filipino cooking as they sell the same vegetables the Filipinos use in their cuisine, just like the banana blossom.
