We don't give cookies or junk food to our baby, but here is a recipe I ammended to be as healthy as I could make it... So far only tested on adults :)
ALTERNATIVE OATMEAL-RAISIN COOKIES
1 cup (2 sticks) butter, room temperature
1 cup packed golden brown sugar
2 large eggs
2 Tablespoon vanilla extract (or more)
1 1/2 cups whole wheat flour or all purpose flour (I do half half)
2 Tablespoon Cinnamon (or more)
2 Tablespoon dried coconut (or more)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup dark chocolate chips (optional)
2 cups old-fashioned oats
1 cup raisins
1/2 cup oat bran
Alternatives:
Orange extract instead of vanilla (or both)
Add nutmeg, ginger, or other spices
Dried fruit instead of chocolate
Chopped nuts (probably not for a baby if you have allergy concerns)
Experiment – you can’t go wrong!
Preheat oven to 375°F.
using electric mixer if you have one (I don't), beat butter and sugar in large bowl until smooth and creamy.
Add eggs and vanilla and beat until blended.
Sift flour, baking soda and salt into small bowl;
stir into butter mixture.
Add chocolate chips, oats, raisins, and oat bran
stir until well blended.
Cover and refrigerate for 5 hours
Working in batches,
drop batter by heaping tablespoonfuls onto ungreased baking sheets.
Bake cookies until golden but still soft to touch, about 8 minutes.
Cool cookies on baking sheets.
