We started cheese with our toddler around 10 months, we started with cheddar but he likes a lot of different types now.
We never bought 'baby cheese' or anything special - just full fat cheese from the deli counter.
Since all the other food is homemade without salt, the salt in cheese was not an issue for us and it is a great healthy snack.
I started my baby on cheese quite early i think around 7.5months. i found a president brand of cheese cubes that are similar to cream cheese and not at all salty.
i add one to pasta cooked very soft and a bit liquidy.
parmesan cheese is also supposed to be the healthiest, so yu can grate a teaspoon into his food. we started to do this even earlier.
I started cheddar with my baby at about 8 months. Grated cheddar sprinkled & melted into his pasta and he really likes it. Annabel Karmel also suggests Gruyere cheese as a good start though I haven't tried yet, apparently it's more mild & sweeter.
