My partner has secured a job in Hanoi and I'll be coming over with him.
But as i don't have a job to come to, what do I do about a visa? I know it's
possible to get a 30 day visa and then a 30 day extension, but what about
after that?

guess a spouse visa wouldn't work. Also, my fiance's job is with a VN
company - not an expat deal where the company moves you over.
I did hear that some people enter VN with a tourist visa and then get the
local travel agencies to "sponsor" them for a 6 month business visa. Is this
correct?
With the house, the reason I ask is that we have a dog we are bringing
over, and the logistics are painful - I thought, if we could organise
somewhere via email/photos BEFORE we arrived, we could move in
immediately with the dog when we arrive.
I would suggest you get a 6 month business visa if your husbands company is not organising your visa for you. Most expat deals should include organising a spouse visa.
Houses - have a look for sure as has been suggested.
if you going to find full time job, then no prob,enter as a tourist with 6mth validity, your eventual employer will cover it.
if youre going to dabble in a little english teaching or something to fill the days, then the school will cover it.
re: housing - you will end up paying far above market price if you go that route. it may also be simply impossibe if the vn company is not paying your partner royally - and vn companies are not exactly renowned for their overpaid staff!
you will be surprised at just how expensive it is to live here...
also careful with that dog...you really dont want to know where it will end up if it gets out
